TAO Group Hospitality is hiring a Sushi Sous Chef Overview: The
Sushi Sous Chef is responsible for helping lead the sushi
department, training and developing team members, making sushi and
sashimi, providing guidance and assistance in area of expertise.
Other responsibilities include maintaining the cleanliness and
sanitation of the sushi bar and equipment in compliance with health
department guidelines. Job Description: Knows the proper methods of
cutting fish, meat, and vegetables. Makes sushi rice properly.
Knows how to handle fish and ingredients for sushi preparation.
Prepares all types of Japanese cuisine. Selects fresh and superior
ingredients. Checks the quality of raw and cooked products
continually. Prepares, cooks, and garnishes food. Maintains and
sharpens knives. Keeps sushi station up to sanitation and safety
standards. Checks quality of rice constantly. Maintains excellent
sushi quality and presentation. Checks temperature of refrigerator
and of food. Keeps kitchen areas clean. Checks the employee roster,
makes sure all employees are here and prepared to work, if not,
call the necessary employees in to cover. Completes line checks.
Expedites service. Conducts inventory and ordering for the
following day. Experience/Skills: Two to four years of related
experience and/or training; or equivalent combination of education
and experience. Exceptional knife skills. Managerial experience.
